Suburban's 2016 Spirit of the Year Earlier this year in January we did a Spirit of the Week offering that featured a new addition to our diverse and unmatched Vermouth Collection. For those just tuning in and unfamiliar with the wine-based beverage, Vermouth is made by infusing various botanicals (fruits, herbs, spices and roots) into a white, low-alcohol base wine. For us here at Suburban, good vermouth is a necessity. A good portion of our favorite cocktails (such as the Negroni, Martini, and Manhattan) include vermouth. This year, it?s time to take your Vermouth game to the next level. Whether you strictly use it in cocktails or enjoy vermouth as a stand-alone sipper. There is one thing we know for certain and that is, you will be trying Cocchi?s Vermouth di Torino as many ways as possible. Giulio Cocchi was a creative, open-minded pastry chef from Florence who, in the late nineteenth century, moved to Asti, a small but lively town in the north west of Italy. In Piedmont, he was fascinated by the local food and beverage culture. With a natural vocation for crafting his own medicinal/herbal wines, Giulio decided to start his own business in Asti. In 1891, he began distilling, blending and producing his own vermouths and sparkling wines. Unmistakably Cocchi in character, Vermouth di Torino is one of only two geographically protected AOC vermouths (the other being Chambery). This Storico Vermouth di Torino upholds the regional tradition of using a fine Moscato wine base infused with a secret recipe of local and exotic botanicals. Traditionally drunk on its own or over ice, this vermouth will also add another dimension when used as an ingredient in your classic cocktails. Try this... The Suburban Negroni 1 oz Jensen?s London Dry Gin 1 oz Cappelletti Aperitivo 1 oz Cocchi Vermouthdi Torino Instructions: Combine ingredients in a pitcher filled with ice. Stir gently for about a minute, then strain the contents into a chilled martini or rocks glass; garnish with a swath of Orange Peel. Tasting Note: A remarkably complex aperitif wine, on the nose you immediately find aromas of singed orange peel, vanilla, root beer and caramel. Over time, faint menthol notes develop into aromas reminiscent of dandelion and burdock root. This vermouth is very full flavored. On the palate, one immediately detects a bitter, earthy character which nicely balances the sweeter notes of licorice, orange zest and sugar. A very bold, long finish, with the bitter/sweet balance staying with you to the end.
