Hillrock Estate Distillery Description
A pronounced nose of caramel, dried fruit, vanilla, oak and spice, accented by an elegant floral note. The full-bodied palate opens with rich notes of brown sugar, molasses and toffee, followed by roasted corn, clove, cinnamon, and a touch of spicy rye. Oloroso sherry notes of walnut, fig and candied dried fruit merge with caramel and butterscotch on the long, balanced finish. 46.3% alc.

From master distiller Dave Pickerell, this estate-grown, field-to-flask offering makes good use of oloroso Sherry barrels. Look for peach and vanilla aromas, bold raisin and brown sugar flavors and a gentle exit that just hints at Sherry. At nearly 93 proof, the alcohol makes its presence known, so add some water or vermouth if you must. Attractive and substantial squared bottle.
