Re-establishing New York?s legacy as a mecca for house-made spirits, one beautiful bottle at a time, Karl and Susan Johnson recently launched Denning?s Point Distillery in Beacon, New York. The distillery resides in a 2,800-square-foot renovated garage in one of the classic 19th century building in downtown Beacon. Spurred by the New York Farm Distillery Law, passed in 2007, there are now close to 40 craft distilleries in the state. Denning?s Point, named after the city?s scenic peninsula that reaches out into the mighty Hudson River, is Beacon?s first. They use Hudson Valley grains, and malt from the Finger Lakes region, to produce their spirits. Viskill Vodka, the original Dutch name for Fishkill Creek, and a Hudson River tributary that flows along Beacon?s East end, is made from 100% New York wheat and cut with New York state spring water, distilled one time and filtered continuously for 3 days with carbonized coconut shells. This spirit offers a complexity that is unique and will appeal not just to vodka aficionados but other spirit lovers because of its distinct personality and high quality. Viskill Vodka has a clean, creamy and super smooth taste, and begs to be made into a vodka martini or enjoyed straight up chilled or just with a couple of cubes of ice. Tasting Note: Clean, sweet aromas with no trace-off notes, sign of a carefully done distillation. Plump, clean and full on the palate, creamy and bread like flavors with a hint of white pepper at the end. An exceptionally smooth vodka.
